Chocolate Banana Bread



Makes:
12 servings

Ingredients:

  • 1/4 cup non/lowfat margarine
  • 3/4 cup sugar
  • 2 bananas, mashed
  • 2 egg whites or 2 tablespoons egg substitute
  • 1-3/4 cups flour
  • 3 tablespoons unsweetened cocoa
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup non/lowfat vanilla yogurt
  • 1 teaspoon vanilla extract

Directions:

  • Coat loaf pan with nonstick cooking spray (nonfat), sprinkle with flour.
  • Set aside.
  • Using an electric mixer, beat margarine and sugar.
  • Add remaining ingredients.
  • When smooth, pour batter into pan.
  • Bake at 350 degrees F in center of oven for 50-60 minutes.
  • Let stand 5 minutes, remove from pan and finish cooling on wire rack.
