Chocolate Banana Bread
Makes: 12 servings Ingredients:
- 1/4 cup non/lowfat margarine
- 3/4 cup sugar
- 2 bananas, mashed
- 2 egg whites or 2 tablespoons egg substitute
- 1-3/4 cups flour
- 3 tablespoons unsweetened cocoa
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup non/lowfat vanilla yogurt
- 1 teaspoon vanilla extract
Directions:
- Coat loaf pan with nonstick cooking spray (nonfat), sprinkle with flour.
- Set aside.
- Using an electric mixer, beat margarine and sugar.
- Add remaining ingredients.
- When smooth, pour batter into pan.
- Bake at 350 degrees F in center of oven for 50-60 minutes.
- Let stand 5 minutes, remove from pan and finish cooling on wire rack.
